Grandma’s Baked Beans, A Family Tradition

Soak 1 lb of beans,* in water to cover, overnight; Rinse and recover with water in an ovenproof pot Add 1 cup sugar (white or brown) ½ cup ketchup ½ cup mustard ½ cup molasses Chop and add 1 green pepper Chop and add 4 or 5 slices of raw bacon if desired Salt and pepper Place in a 325º oven, covered Check liquid level after a couple of hours and add more water if needed. Check doneness of beans after a couple of hours.  Depending on variety of bean, cooking time may take up to 4 hours. (*small white beans work best, but you can use lima or northern as well)
