Home Grown Green Salad Dressing

1 ½ cup fresh mint, chopped

2/3 cup fresh cilantro

1 serrano pepper, seeded and chopped

4 tablespoons of honey (fresh and local if possible)*

2 tablespoons red wine vinegar *

1 tablespoon soy sauce *

¼ cup olive oil


Combine first 6 ingredients in blender.  Blend until smooth.

Add olive oil and blend.

Makes about ¾ cup.  May be made ahead of time and refrigerated.  Serve over fresh greens, preferably organic and locally grown.
