Easy & Delicious Summer Grilled Artichokes
Select artichokes of equal size.
Cut artichokes in half.
Clean and dress to remove the inedible interior.
Place the artichoke halves into a large pot of boiling water.
Boil for 10 minutes or until the artichoke heart is tender.
Remove and place immediately in a large pan of ice water which will stop the cooking process.
Heat your grill to very hot.
Drain the artichokes and pat them dry as best you can.
Drizzle olive oil evenly around and inside the artichoke.
Sprinkle coarse salt liberally inside and outside the artichoke.
Place on the hot grill and brown both sides until heated through.
Enjoy with curry mayonnaise or melted garlic butter.
One artichoke per serving. Perfect as an appetizer or side dish.
